Description
The oil from Azienda Agricola Salcini originates in the countryside of Viterbo, from seventy hectares of olive trees managed for quality rather than yield.
Thus, in Castel d'Asso, among the Viterbo hills, seventy hectares of olive trees are grown with drip irrigation and wide spacing, to give the plants room to mature well. The olives — Caninese and Leccino varieties — are hand-picked before full ripeness, when their freshness is still intact.
This green oil, with golden reflections, has an aroma reminiscent of freshly picked olives and cut grass. On the palate, it is a medium-light fruity, elegant oil, with balanced bitterness and pungency, and low acidity that keeps everything in harmony.
